Determining tenderness

In the past, I have used the tooth pick method slid along a rib bone; looked at the pull back at the bone, and just plain old pinch the rib and a means of determining the tenderness. However, I recently tried cheating.

Pulled one rib. Very tasty and smokey. 

But if your upper denture comes out, it ain't done!

A very well-thought-out variation of the toothpick method, Dave!  Unfortunately, since I still have all my teeth, I have to stick to the toothpick method! ;D
