Delayed cooking start time

is there a way to delay my start cooking time? I would like to put my pork butt in my smoker at night and have it start cooking during the night.

I don't believe you can do this. I could be wrong but pretty sure no.

I start butts and briskets around midnight then off to bed. A. Quick Look after I get up then on to other things. I don't expect them to be ready before noon and that is when I start checking regularly about every hour or so. When they hit my set temp, I pull, double wrap in heavy foil, then a large beach towel and into a cooler. Stays hot for a couple hours or so.
