Finally bit the bullit

Well finally did it. Bit the Bullit and ordered a 3D. I just knew if I ordered a 1 or 2 I'd always wish I got the 3. Never considered anything larger. I've been smoking for many years using a homemade rig but this is the first unit I've seen that was capable of cold smoking as well as hot. I've been cold smoking Salmon for awhile. I've been generating my smoke externally and piping it into an old commercial refrigerator. That has worked well but lately I'm doing some hot smoke and having trouble controlling temperature. My old unit was large enough to do a whole case of bellies to make bacon but I don't think I'll be doing that large a quantity in the future.
Looking forward to a new adventure with a Smokin-it unit. With help from you all that is.

I started with a #2 and then last year bought 3d. These babies are the best, simple and amazing results every time.
