Hey Bill, I have read where people do natural raw peanuts. But, really have not smoked any nuts at all. I am trying to do some almonds as love the smoked almonds they used to give on the planes. I have an idea of how I want to do them but, I have a couple of other projects first. But, will do them in my #1 as I made some seafood racks for it. Wish I could have been more help. This might help:

Have not tried shell on. Get raw if you can (not roasted or salted). A little evoo, any rub you like, and use the link on "Jeffs" site which is noted above.
I did brine peanuts before and they didn't turn out so great for my taste.
