Smoked fatty HELP!!!!!!

Smoking fatty n 3D set at 240 degrees and probe at 160 and alarm will go off!
I will relocate probe and in couple mins you can watch it spike to 160?????

You sure the tip of the meat probe isn't coming out the side, or touching the shelf?  Sounds like it's reading box temp.

I thought the same thing you did. I relocated probe 3 at 4 times and same thing so I just went by time. Pics to come tomorrow, to many people here now. It's exploding with flavor!!!!!

Smoked for 3 hours at 240 no water pan. 2 chunks of cherry.                        2 lbs ground  sausage ( I used my wild hog )
1 lb original or thin sliced bacon (16 slices approx.)
½ lb ham, diced into quarter inch pieces
1.5 cups sharp cheddar,

Made seafood gumbo to!

Looks Awesome! This is on my summer to-do list. I have not tried one of these yet.
