1st Time Chicken Wings SI2

I've been dying to try smoking some wings for quite awhile and finally did it.
Started with a pack of wings from Costco from their meat dept. (Raw chicken wings, not pre-packaged).     Debated about brining, but I looked at them little things and thought there wasn't enough meat on them to worry about.    Rinsed them and skinned half of them (wife doesn't like the skin) and then used a generic dry rub I had around.     I used 2.25 oz Hickory and set the smoker at 235.   After 2 hours I took them out and then mixed some wing sauce on them, and put them on a pre-heated hot gas grill for a few minutes to crisp up on the skin and get a good caramelization on the sauce.     They turned out fantastic.    While the grill worked well, I think I might try the boiler next time to crisp up the skin.

Crisp first (whatever the method) then add sauce off-heat. The sauce will burn long before the skin gets crispy. If you sauce first, then put on the grill or under the broiler, the moisture from the sauce prevents the skin from getting crispy, just burning the sauce. The skin remains unchanged.
