Poultry / Re: Deboned Turkey Breast
« on: November 26, 2020, 06:48:17 AM »
I'm right there with you!  I have a 9# turkey breast ready to go this morning at 10am or so, expecting about 4.5 hours for the total smoke at 245F and pulling the breast at 165IT.    Using 3.5oz of cherry wood.

Happy Thanksgiving!

Model 4D - The Big Daddy! / Re: Cleanup
« on: November 13, 2020, 10:48:45 AM »
I do the same thing with the inside of the box -- just a wipe down after each smoke to clean up the liquid on the bottom of the smoker.  Even with foil on the bottom, I still get some liquid that seeps around the foil.   A quick wipe and I'm ready for the next smoke.

Maybe once a year or so, I will also scrape the top and sides of the box to get some of the black stuff off, but it really isn't that much.

Pork / Re: First Pork Butt

Well done--looks great!   I agree on starting earlier for the smoke--nothing worse than stressing over the stall with no clear indication of when it will end!   The other nice thing about starting earlier is you can wrap the butt and let it rest for several hours if need be to let the juices redistribute.   I use the double towel method in a cooler for the rest period and it always comes out hot.
