I love my #2.  Already smoked 2 butts, a couple of prime rib roasts, strip roast, brisket, and doing a slab of bacon tonight.  My only drawback with it is that I don't get a good bark.  I did foil both butts at about 165-170, but I have always done that with my old smoker, and always had a hard bark with it.  Any suggestions on improving the bark?  The bark on the beef was very light.

Like many on here, I don't foil or use anything during a smoke of pork butt.  Close the door, and relax.  I've always had great bark on my butts,  whether smoking at 225* or 235* F.   Try this and I think you'll be happy

One of the beauties of these smokers is that you don't ever need to foil... you can save that time, effort, and expense.  :)

If you have the time, try running a butt at 200 degrees. Plan on +\- 24 hours but some seriously heavy bark. I love how they turn out doing this way but don’t always have the time.
