Title: Equilibrium Brine for Briner Jr

I purchased a 4.5 lb flat brisket and I started making Walt's equilibrium brine and I quickly realized the quantity would be fine for the vacuum seal bag Walt used, but it would not be enough if I use the Briner, Jr. 

I just added more water until the brisket was covered.  Have I diluted this too much? 

What if I had brined two flats together and then put one in the freezer for a later smoke?

I appreciate any help or comments.

My baby back rib smoke, that you guys helped with, was a big hit.  Thanks!

Most likely, you have diluted it too much.  The equilibrium brine is based on weight, so adding more liquid to cover the meat has substantially increased the liquid weight.  Next time, use a bag, and save the Briner Jr for gradient brines.

I have brined, dryed, applied binder & rub & then frozen in vac bag for later use.  The final outcome was not affected.

Happy you are giving my method a try.  Let me know what you think.  It might be worth redoing the brine but if not I'm sure you'll at least get some benefit from useing it diluted.

I think that would be fine, Walt (brining/saving for later).  I was mainly addressing adding (probably) double the water for an EQ brine.  Especially considering how little salt and sugar it takes for those, I would think the dilution wouldn't work very well.  What do you think?

I would expect some benefit.  The question is how much? I don't know.
