That does look real good.  I may have to make a mini batch.

I have to see how the spice reacts with my heart burn.

Yes, the 1/4 cup of cayenne could pack a punch, but luckily the recipe does not call for a 1/2 cup!

I would say the 1/4 cup does pack a punch. Its really a question of "how much" rub are you putting on. For example on a pork butt - this is fine - pack it on thick for a nice bark.

For ribs, I personally love it; however as a litmus test my wife won't jump up and down for that much... and my 6 & 8 year olds will eat it  but ask for milk ;-)

My point being its not tough... but i fyou have heart burn, GER, or are looing to serve a crowd.... I would sprinkle it on the ribs versus dousing it.

Hey PQ, doing a 12 lb butt this weekend for a crowd. They're not big spice folks. What heat level will I get if I cut the cayenne in half? Or does the meat amount cut it considerably?

Heat is low low low.

If you smoke a 10 lb butt the rub will turn into a nice bark.

You could apply less rub.

What I do at times is create burnt ends.   Cut off outside bark and another inch,,, cube it up.
Then pull the rest.

Burnt ends is a good idea. I'm planning on giving it a try. Thanks!
