3.5 lb brisket piece
« on: June 10, 2020, 11:49:42 AM »
I have a 3.5 lb brisket cut that I got from my butcher, this is my first smoke in my #2 and was wondering about the guidelines on time? I saw somewhere here 1.5 hours per lb but wanted to check on that? Any recommendations on timing, temp etc for this smaller brisket piece?

I would shoot to cook to 200 internal, wrap in foil at 165 internal.
