Hello From Indiana

Greetings everyone. I've had my model 2 for a while but just got around to joining the forum. I recently retired and now have time to do the things I've been putting off. So far my smoking successes have been: pork ribs, pork shoulder and beef ribs. I have a rubbed brisket flat in the refrigerator right now that I will be attempting next. I'm going to set it over a pan of water at 220 degrees and leave it alone until it reaches 200 degrees. I appreciate all of the valuable information that many of you have already provided while I was lurking. Thanks.

Thanks for the warm welcome everyone. I think I just smoked my first tender brisket. It's in the cooler resting now. It was in the smoker for 18 hours and passed the poke with a skewer test even though it was only 195 degrees instead of my planned 200.
