Fully Cooked Sausage
« on: May 31, 2015, 12:20:35 PM »
Two packages of "pre or fully" cooked sausage going in today.

Do i have to get these to 230 internal temp or just let it warm up for an hour in the SI regardless of internal temp.

Package says just to grill up for 8 to 12 mins until warm.

Thanks

If they are pre-cooked I would put them in for one hour. If they are not pre-cooked you are going want to smoke them for several hours, smoke till they reach 160 degrees.

Thanks, 160 internal if not pre cooked.  I was looking at wrong column on the chart!

No worries, I think at 230 degrees you might have ended up with jerky :)

Cant beat it, smoke makes a difference even on a quick meal.

Take any pre done (cooked) sausage and smoke for hour and 1/2.

Finish on gasser.

I did slot the tops before putting in smoker.  Cased sausage hold the fat if just put in the smoker.

I added shroons, potato and onions in a small griswold while smoking and on the grill.
