Nothing like smoked steelhead for snacks on Thanksgiving. Brine for one pound of fish was 3 tablespoons brown sugar, 1 tablespoon dark maple syrup and 1 tablespoon kosher salt. Black pepper on top, alder for the smoke, 150 temp to an IT of 138. Low and slow.
