Mrs. RG's Pulled Pork Nachos

It's amazing to me that we've never made pulled pork nachos before!!

I was at the store with my wife this morning and we were trying to figure out what to make for dinner tonight.  I had saved 3 pounds of pulled pork from my last SI3 smoke I did and I figured we'd make nachos.

So we picked up some needed ingredients and when we got home I pulled a 1# foodsaver bag of pork from the freezer to thaw. Tonight arrived and my wife made these bad boys up and I have to say. ....they were AWESOME!!

She topped the chips with pulled pork, rotelles, jalapeƱos, monterey jack and then baked it all up. Does it end there? Wouldn't this be enough to still be delicious?  It would've been enough for most but she had to kick it up a notch! She made up some queso using a recipe from a friend of ours. He said it was like Mexican restaurant queso dip, he was right! Drizzled a little over the chips and OMG!

These WILL be made again  ;)

Looks great but the dips is key.
