Pulled Pork BLT experiment

I needed an excuse to try out the Tappecue (only used one probe for the maiden voyage) and also I have been wanting to try something like this for years and finally I did it! I smoked a little bitty butt on the #3 to make some Brunswick Stew and used a little of the meat for my creation.

I took some juicy pork and applied a little BBQ sauce to it, laid it on a soft hoagie roll and on top of that placed 3 Devil's Spit pickle chips. Then on went 3 slices of Wright Brand Applewood Smoked Bacon. The top bun had a very light spread of mayo (you can't have a BLT w/o mayo!) and then some vine ripe tomato slices and shredded lettuce.

I know it sounds weird, BBQ sauce and mayo but when that sandwich got all pressed together, the pork, the bacon, those crazy hot pickles.....it was magnificent!

The pics are not the best, too lazy to grab the camera so I used my phone.

That looks, quite simply, amazing.  Sort of like a pulled pork club sandwich, only without the middle layer of bread.  YUM! 
 
(and I've mixed mayo an BBQ sauce for use on smoked meat sandwiches before... they were great.)

I was THIS close to adding some deli thin sharp cheddar or pepper jack, lol. Maybe next time! I did think of the middle layer of bread idea as well. Ideally I would have liked to toasted the roll but just on the inside, leaving the outside soft.

Another idea I had similar to this was to do the pork then shaved Virginia ham, bacon, lettuce and tomato, mayo and a Hawaiian style pineapple & horseradish mustard sauce (sweet and sour) drizzled on all of it before being closed up! You get smokey, salty, sweet, sour, spicy, crunchy, soft, hot and cold all in one bite! I think it would work.

I am here to help :) Not really an innovation moreso than a guy who likes to find something good to eat. I've had about 50/50 success with my experiments, this one worked at least.
