Now my definition of a Cowboy Steak is a thick rib-eye grilled over wood
Fired up my Good One Open Range last night (it is an off-set that you can grill in the fire-box) with mesquite lump
Into the pool went two thick ribbies laced with Big Poppa Smokers Double Secret Steak Seasoning...........good stuff
Medium Rare....perfect

I think it's weird that you and I did the same steak Saturday! I did mine on a gasser, though, with smoking red oak and Santa Maria rub. The fam's out of town, so I treated myself to a full bone, 1.9 lb cowboy! Good stuff, right there!!
