Welcome, Big P!  Head over to the "Introductions" section, when you have time, and tell us about our new friend!  We like to get to know our new family members!  It never hurts to add your first name and town to your signature line, too!

Congrats on the #2!!  You'll love it!

Welcome again, Paul.  You won't be disappointed...I smoke something pretty much every weekend in the #2 and really look forward to it!   This weekend...chicken thighs today for pulled chicken, 2 racks of ribs tomorrow.  Cheers!

I tried using Alton Brown's recipe http://www.foodnetwork.com/recipes/alton-brown/smoked-salmon-recipe.html (http://www.foodnetwork.com/recipes/alton-brown/smoked-salmon-recipe.html) which was a bit salty.  This weekend I tried again with 1/4 cup salt and 1 cup of sugar with much improved results.

Mike the Alton Brown Recipe looks good. It is pretty basic and a good start. I use this one http://smokinitforums.com/index.php?topic=1820.0 basically the same thing but with a few spices added. You will find your own preference. Alton's recipe calls for chips or sawdust, in the SI the blocks or dowels will be fine. However if going low temp for a cold smoke, 100 or less I prefer chips. Good luck and post some pictures of the before and after, it makes us all feel included.
