#2 on the way
« on: March 20, 2020, 08:45:38 PM »
I ordered a #2 analog this morning and got a shipping notice 10 min.later. They must have people standing by the trucks with the boxes in hand waiting for the orders to come in. I live 1.5 hrs. away but free shipping is cheaper then driving there by a long shot so I’m standing in the window looking down the road for it to arrive. I’ve been using a low end mes for the last few years and loving the whole smoking experience but I’m sure a whole new world of wonderfulness awaits me, I’m pumped.

You'll enjoy the #2. So much better than the MES.

Welcome Gary from SE Arizona.  I do believe if I lived close to SI I would have driven over, and done some haggling with Steve just for fun.  SI is strictly family run by Steve and his wife Rebecca.  Ben is their IT guy. You are going to enjoy the smoker. And the service if you need it.

Thanks for all the good words everyone, someday I might find myself near SI and I’ll drop in for an chat, especially when I have good smoking experiences to share. I look forward to many memorable meals coming soon to a table at my house.

Well it’s here and it’s gorgeous, wheels are on it’s cleaned out and the break in smoke is underway. Sure is nice to have something to think about other then the current state of panic.

Well, first test smoke under my belt (actually is too). Did some chicken drumsticks I had in stock. I didn’t brine them because I was anxious to smoke something, just seasoned them with Lawry’s seasoned salt and smoked at around 250 ish with 2.5 oz. of pecan chunks for 2.5 hrs to155. Slathered on some of my homemade bbq sauce and glazed them under the broiler. I’m telling you guys: it was almost too good. I only have pictures of half because my wife and I “pigged out”. I’m happy.
