I have a few questions for all the skilled model 1 owners:

1) What is the best way to season the smoker?
I would normally spray the inside with PAM, put a few blocks of wood in the tray, set the temperature at 225 and turn the smoker on for 2 to 3 hours. Comments?

2) When smoking, I have always placed a pan of water in the smoker. Then used the 3-2-1 method for pork ribs. 3 hours at 225 with dry rub. 2 hours at 225 in a foil rap with brown sugar, olive oil and apple juice, followed by approx 1 hour unwrapped to finish temp.

I hear the water pan isn't required or desired. Comments?
Should my 3-2-1 method be adjusted?

Stewart  - As Pork Belly suggested, read all you can. As for seasoning, 350 degrees just unpack and make sure smoker is free of packing material. Read the manual and no need to spray with Pam or any cooking oil. Really simple seasoning. Water pan not necessary. 3-2-1 is for pork ribs. Read up on pork or use the search feature. I do not use the 3-2-2. I just let it go for 5 hours and then check for fineness. Sometimes less time sometimes more. Some folks use a mini loaf pan with liquid for large briskets and butts.

First of all welcome!
Unless you are making jerky, the water pan will not hurt the smoke. I would also forget about the 3-2-1.... with this smoker the no peak works wonderful.
P.S.
Take time to read the basics, (Lots to read, but we are a friendly group so you can also ask on how to do this or that) when you want to do something that is on your first time list.
