how long is too long?

I prepped two loins yesterday (Sunday)- for Monday.... forgot about a meeting.
OK, no problem, I will smoke them Tuesday...... I have parent-teacher conferences.

Ok, can I let them sit in fridge for basically 3 days with the rub and garlic injection until I can smoke them on Wednesday??

I don't know if this makes a difference or not. One was frozen and then thawed, the other was bought from Kroger yesterday.

I don't think it would be a problem provided that you tightly wrap them with plastic wrap and keep refrigerated. I wouldn't let them longer than the 3 days.

Three days should be fine ... but ...

Whenever you pierce a whole muscle (injections, a Jacquard, etc.) you're increasing the likelihood of bacteria growth.  Keeping it tightly wrapped and refrigerated is key to it lasting.  If you used a commercial garlic butter injection you might also see a slight textural change but nothing too horrible.  If you can't smoke them tomorrow you may want to call it a day or freeze the loin that has not been previously frozen and discard the other.

Thanks guys.... I just finished eating them (cutt out of meeting early) 2.3 oz of hickory smoke was a lot for us. Moisture was awesome but lost the flavor of the meat in the smoke. Maybe a spicier rub would have offset the smoke.  We all agreed we liked the BIG EASY infrared  cookers loins better. Oh well live and learn. Only took 2.5hours at 225. May just try a spicier rub annd no smoke next time.  Also.... were not t the best loins I have ever purchased. THANKS SO MUCH for the advice snd help.

BIGBOB,  Hickory smoke seems pretty strong for my family also especially on pork and chicken. Dont give up try some apple my favorite or cherry I never use more than 2oz. usually less.

Shome's spot on, Big Bob ... blends of wood give a unique flavor profile.  Hickory is quite strong ... I think pecan is a very nice substitute.  Apple, cherry, peach ... all of these are killer fruit woods to cut your teeth on.

took loins to work for lunch and brought extra for my pals to try.... the flavor of the meat returned.... ??? ????.... and they tasted better than last night!  my buddies thought they were awesome and are raising money for me to go buy meat for them and smoke more!!!  strange twist of events! LOL

Glad to hear it worked out.  Your story gave me a chuckle, keeping your friends well fed will definately keep them close.  And you may help Steve sell a few units along the way.

I don't know why, but the taste of the meat always seems better to me on the next day... ::)
