cheesy Potatoes

the sous vide part of the recipe was modified from this one

cheese sauce
300  grams        cheddar
300  grams        milk, whole
   9   grams        sodium citrate
   3   grams        salt
0.75  grams       sodium hexamatphosphate

1.)      sous vide  @167F   for 15 min
2.)      put in blender, or whisk by hand (takes a while)


3.)    peel and slice potatoes,   i used a mandolin, and didn’t measure
4.)    layer potatoes and cheese sauce in casserole dish
5.)    bake @ 350F for 90 min, last 10-20 uncovered

forgot to take a pic after, but very good, i like this cheese sauce for mac and cheese also.  it’s basically homemade cheese wiz, but by using just any grocery store cheddar, you get a very intense cheese flavor because it is just cheese and milk, but it is only good got as it cools, the texture gets bad
