Mothers Day Smoked Turkey

Half Turkey's make great party food.  Just like a spatchcock chicken, they cook quickly and evenly.  This 6.5 pound bird smoked in just over 2 hours ant 250.  A 24 hour dry brine with just salt works well.  I added some New Mexico medium hot hatch chilies and a touch of black pepper a couple of hours before the smoke.  This size bird fits nicely in my model 1.
