Double Smoked Ham - Wood Amount?
« on: October 26, 2023, 02:25:56 PM »
I'm using a double smoked ham recipe from a friend with a Traeger smoker, which I believe smokes the entire cooking process.  I'm trying to determine how much wood I should use in my Smokin-It 3D, to achieve the same results.  He smokes ham for 3 1/2 hours, then flips it cut side up and bastes it for 2 more hours...so 5 1/2 hours total cooking on a Traeger continual smoke.  Any suggestion as to how much wood in my 3D might be equivalent?

I have double smoked ham a couple of times and found that 3 oz of hickory was the sweet spot for family and friends. Pretty much trial and error till you get what you are looking for.
