8.5 pound, 225 smoker temp, 203 internal temperature, cut fat off, Famous Dave rub, 5 ounces Cherry wood, 12.5 hour smoke, pan of apple cider in bottom of smoker. Resting now getting ready for lunch-made a red slaw for a side. It is the best our house has ever smelled. Baby back ribs this afternoon for supper.

Nice job, looks great. I’ve got a 9.5# butt in my 3DW as I write this. It has been in for a little over 14 hours at 225. The current IT is 191, I also cook pork butts to 203 IT. I will post more about this cook later.
