#1, 2 slabs, cooking time

If it's Sunday, I'm smoking something in my #1. I score lots of points with my wife who doesn't care what I cook. It's a great time to experiment! When I do ribs, it's usually 1 or 3 slabs (cut in half to fit). When I do 1 slab, it's usually ready in 4-4.5 hours. With 3, I agree with Divotmaker's 5 1/4 to 5 1/2. This was my first batch of 2 slabs. I'm no good with using a toothpick to decide readiness. I feel the firmness with the tongs and look for ribs that break or are about to break. These weren't ready at 4 1/4 hours but when I took them off at 4 3/4, they were a little bit overcooked (good flavor but a bit too soft). I love the fact that the #1 let's me spend less time messing with the ribs but I will start checking them every 15 minutes instead of 30 min at the end of the smoke going forward.
