Will not be able to pull the butt after rest....What is best?
« on: January 23, 2016, 11:22:13 AM »
That little issue called work has reared its ugly head and I will not be around at finishing time of the PB.

I'm planning on having someone who is at home double wrap in foil then put in fridge.

What is the best way to reheat to keep the bark as "crunchy" as possible?  (Or will I just be sol on the bark?  I'm guessing the best way to reheat is keeping it wrapped and go to 140 IT and then pull it?

Thanks in advance.

Don't put it in the fridge.  Put a towel in the bottom of an empty cooler, wrapped pork butt, then another towel on top.  It will be fine for 4-5 hours.  If it's going to be longer than that, they can put it back in the smoker @ 140 (keep it wrapped).  The immediate fridge will not let it rest properly.

Update....Great news... IT at 185.  I should be able to wrap it up before I leave.   And maybe get in a bit to go!!

Thanks again for the help.

Made it to 188 with time to spare.

Now, how long should I let it rest?  I need to leave in about 30 minutes.  Should I pull it now?  Or do it in about 10 hours...(assuming I'll need to reheat)...

You don't have enough rest time before you have to leave.  Foil wrap and leave it as is.
