Sunday Smoke with Tappecue

Getting ready for a smoke tomorrow with the new Tappecue. Got a small butt and a loin cut in half in Tony's recommended brine.

Placed meat in brine at 1:45pm today, will take out at 1am and put in fridge.

Smokin-It #3 (purchased in 2014) that replaced a Masterbuilt XL (ugh) and a 10+ Year-Old Big Chief (still used for fish), and few others over the years, along with variety of Weber Gas/Charcoal Grills, Anova Sous Vide, etc. devices.

Gregg, I smoked pork loins today in the prototype, using an Auber to test the box functions.

The smoke went off flawlessly, and I'm definitely impressed with the Auber!  We wanted to test the box functions to make sure that wasn't part of the digital controller problems.
