Title: 1st smoke on my model #2

I had my first smoke on my Model #2 this weekend. I had some pork loin chops and a London Broil I had to use up so I decided to experiment on them for the first smoke.

I rubbed the London Broil (shown in the pic sliced on the cutting board) with a home-made southwest style expresso rub. I rubbed the pork chops with home-made pork rub (shown in the pic on the platter).I used apple and cherry wood for smoking and smoked the meat for about 4 hours.

I am very happy with the results!!

Great job on the first smoke!    What temp did you use for the smoke?    I did some 1" chops a couple of weeks ago, and at a setting of 225F, they were at 160IT within 1.5 hours.

Set the temp on the smoker at 225 until the wood chunks started smoking and then backed off the smoker temp to 180. I was trying to get that low and slow cook for the London Broil to be nice and tender. It worked out fine! Pulled everything out of smoker when the meat thermometer was 150 on the beef.

The pork chops came out nice and moist and perfectly cooked!

Nice job on the first smoke, Monkey!  I've thought about doing a London broil before, but was afraid it might come out a little tough.  This gives me new confidence to try one!  Looks delicious!!

Thanks, Smoke!  I have been so set on 225, never thought about backing it off to allow more time for the smoke to kiss the pork...excellent method that I will try on my next round of chops.  Thanks!
