Title: Venison Backstrap dinner

First time smoking venison and I can honestly say it was the best I have ever tasted. Our family usually flours and frys venison.
I marinated overnight then bacon wrapped. No rub or seasoning. Through them in the smoker 225 till 140 IT. Came out amazing.
Served with au gratin potatoes and sautéed carrots

Thanks for the compliments......and sorry for the side pictures. Computers and I don't get along.  Currently I am brining a 10 lb pork belly for bacon. Started the brine on Sunday and will smoke on Sunday. Fingers crossed.

I have done this a few times now, but instead of weaving the bacon(I'm lazy) I just wrap it around in spirals. I also finish it on the grill or in the oven just to tighten up the bacon a little.

Rick - The venison smoked for a couple of hours is all. The marinating probably help

What was your marinade recipe? Looks very good!
