This weekend, I decided to cook steaks on the grill for Father's Day. But, I didn't want to miss a chance to use the #2 as well....so, I did baked potatoes and corn on the cob in the smoker. For the potatoes, I seasoned and cooked uncovered for 2 hours at 225, then wrapped in heavy foil for the remaining 2 hours...they were quite done and very good! For the corn, I soaked in the corn in pulled back husk for an hour, then applied Italian dressing to the corn (found this from another site) and replaced the husk around the corn. Smoked the corn for 2 hours. Very tasty and something that I plan to do every time I am thinking of grilling the meat!

Here's a little gizmo I picked up for beer can chicken ... and note that it will do double duty for smoked corn-on-the-cob or taters! Well worth the $15 I paid.

That IS cool! It's 13x9x2, so it should even fit in a #1!

Just a note about these racks ... a couple of brined chickens (rubbed with an simple spice mix using ancho chili powder, brown sugar, garlic powder, onion powder, sea salt and white pepper), over cans of Abita Purple Haze, with a slow smoke with a half-half mix of apple wood and cherry wood, with sweet corn ears (slathered in bacon grease and salt/pepper) and small Yukon Gold potatoes (slathered in bacon grease and covered with the same rub you use with your chicken), with chipotle/raspberry bbq sauce for finishing the chicken ...
Well let's just say that these little gizmos have more than paid for themselves.

Do you husk the corn, or leave it on? How much time do you allow for the corn?

I've done both. Thawed ears of Green Giant Sweet Corn on the Cob work well after a soak to help them thaw (salted water and butter or bacon grease), with a light smoke and then a foil wrap with a spritzing of apple juice or butter spray. In the husk, be sure to soak the husks a bit to help give a little steam action for your corn.
