#3
« on: May 11, 2013, 04:19:25 PM »
Finally was able to order the #3, early birthday gift.

Took a while to place the order, something was going on with the web site.

Spoke with Steve, the #3 will start shipping on 5/28.

Thanks for all the advise.

My daughter will be in heaven of the pig shortly.  Loves Baby back ribs!

Congrats ... the #3 is definitely the way to go.  You might also want to introduce your family to the majesty and beauty that are St. Louis spareribs ... the Smokin-It does them justice.

A couple of suggestions from my experience with the #3:  the hickory dowels provided by Steve are outstanding since they burn with greater predictability than chunks.  Also, be sure to lay in the Sam's Club size of the extra-long heavy duty tin foil for lining the bottom and smoker box.  Last but not least, the cart is likely worth the investment (my next big purchase) to save the wear and tear on your back when you're cleaning it up.

Good luck with the purchase ...be sure to post some pics when you get it properly seasoned.   :)

Thanks for the advise. Already ordered the maverick, meatrakes, a couple of great cookbooks. Need to get large quantities of foil wrap. Costco will be in my future.

The big fella arrived at my doorstep last night. Inside the box was the #3 with the new faceplate, a cover, rib hooks, cord holder, and a personalized note from Steve thanking me for my purchase and apologizing for the shipping delay. I am hoping to season tonight and smoke some ribs this weekend.

Very impressed on how the unit was shipped, and the level of customer service. At this point very impresses. Stay tuned!

If not for the darn tropical storm Andrea I would be smoking some ribs today. Looks like I have to wait until Sunday. I was about to season last night and then the rains came falling.

thanks for the encouragement.

After one smoke, I am very pleased with the smoker. Did everything as advertised and then some. Once up to temperature did see some 20-30 degree swings. I did have my probe closer to the top of the smoker than the bottom. If you have any doubts about this product, don't its built like a tank and and is very easy to use.
