One of the more pleasant surprises with my 3D was pork loin. It gave me an opportunity to test out the internal temp probe, but also one of the first "brining" experiences other than turkey. The pork loin came out so tender that you'd think it was tenderloin.....but it wasn't. You can pick one up fairly cheap and take the time to brine and rub and you won't be disappointed.
