now what? you choose my next 3D smoke

ok, I have an SI2 for about 5 months and upgraded to a 3D. I have seasoned it but not cooked with it. I'm looking for my next new (hot) smoke. I have already cooked
1. ribs (about 10 times - baby backs and St Louis)
2. catfish - awesome
3. tuna
4. sword fish
5 beer can chicken
6. rib eye reverse sear
7 7.5 lb pork butt - amazingly easy after the DM marinade

I loved them all. Only think left I can think of is brisket. what is another good meat to do next? I have been looking through the forum but  wondering what other meats people love to cook

1.  Tri-tip roast
2.  Top sirloin roast, or sirloin tip roast
3.  Prime rib
4.  Pork loin
5.  Pork tenderloin
6.  Whole turkey with mire poix stuffing (equal parts chopped celery, onion and carrots)
7.  Chuck roast
8.  Definitely brisket!

I need to go look up the pork loin and tenderloin cooks. I have been looking at that meat at the store and thinking about it. the rest of list is awesome as well. more research coming I guess!  I find that half the fun.

old sarge, funny you say that. I am married to a (ugh) vegetarian. so I end up sharing what I make with many people at work. They asked me if I was working on my retirement plan since there are so few places that do real Cue in the north east.  One guy kept teasing me on buying the 4 over the 3 so I could be ready for my next gig.

One of the more pleasant surprises with my 3D was pork loin. It gave me an opportunity to test out the internal temp probe, but also one of the first "brining" experiences other than turkey. The pork loin came out so tender that you'd think it was tenderloin.....but it wasn't. You can pick one up fairly cheap and take the time to brine and rub and you won't be disappointed. do you have a link to a report on this one? there does not seem to be much on tenderloin and pork loin

As fast as you moved from the 2 to a 3 I thought for sure a 4 could not be far off. I understand the vegetarian concept.  Grain fed beef is but a vegetarian processing plant.
