Hi thinking of getting model 3 what are the size of the racks thanks
Large Egg -Rec-Tec pellet grill -Cajun grill- Weber Kettle 26.5

I just measured mine and they are 14.5 x 21.5

Smokin-It #3 (purchased in 2014) that replaced a Masterbuilt XL (ugh) and a 10+ Year-Old Big Chief (still used for fish), and few others over the years, along with variety of Weber Gas/Charcoal Grills, Anova Sous Vide, etc. devices.

How many baby backs do you fit on each cooking rack? Two, or three? (Not cut in half or anything).

You can only fit two racks unless you use a rib rack to set them sideways.
