Christmas Nuts, Brined and Smoked

Four racks of nuts for Christmas.   Peanuts, pecans, brazils.  Bulk food store buy, raw and no salt.  Package on the peanuts actually said, don’t eat without cooking.

I did a batch UNBRINED (lower rack) and the peanuts were much better that way.   Other two varieties were better with the brine.

Cherry wood, 225 for 4 hours.   Let cool.

EVOO and your favorite rib or chicken rub.

We used Oakridge brine and Chicken season for these nuts.    Nice sugar content which didn’t burn.  Almost a caramel taste?

Recommended, family and 3 year old approved!

This is such a great idea!

Tried it today, using mixed raw nuts. Everyone is going crazy over them ... they might not last til Christmas!
