Hello everybody,

Kevin here from Fort Worth, Texas.

I bought a model 2 five or seven years ago. I have only smoked dear Summer sausage in it twice, and a half rack of baby back ribs once in it. It was fairly cold in Kentucky when I smoked the summer sausage and I had a hard time getting it to the temperature I wanted with the analog control. So both times I ended up finishing the summer sausage off in the oven the last 30 minutes or so. But amazing flavor! I’m looking to do a bypass of the controller and put a switch on it and install the digital Wi-Fi controller from Auber.

I've used my #3 outside when it was close to 0 deg and it got up to smoking temps a little slower than normal, but didn't take that much longer.
BTW- I always start with a cold smoker so the meat can absorb more smoke before it gets over 120 deg.

I'm not sure how to reply to each person separately, so thank you everybody! ( swthorpe, Lonzinomaker, Old Sarge, Hank R, and PulledPorkSandwich). I am not on the computer much, as you can see.

If anyone can answer a bypass and switch answer, I'm going to post it soon in the correct forum. I hope to get the hang of this. LOL. Then once I get my smoker modified, then I would like to get back on here.
