I've been scrolling through posts, and I've noticed something that isn't "allowed" on most forums: names. Many of our members post their first names and location in their tag lines (me included). I don't know about you, but I think this is pretty cool! No matter what the user name is, I know I'm seeing a post from Joe, Ed, Phil, Zed, Mike, etc... I, personally, think this really personalizes our forum!
Ben has done a really stellar job at keeping out the spammers and "one-post-wonders" who sign up for nefarious purposes. The core of our forum is good folks who love good Q and their SmokinIt smokers!
So, I hope that everyone takes the time to post their first names and location in their tag lines so we know who our friends are. If you're new to the forum, take the time to do a post on the Introductions section and let us know who you are!
If you see DivotMaker on posts, you know it's Tony from NW Arkansas - not somebody who doesn't care about our hobby and our forum. Trust that we'll keep the "riff raff" out. We only want folks who want to participate in a group of like-minded people who actually care about our hobby (obsession?). ;D

great suggestion. Its easier to type a name as opposed to a handle. We are passionate smokers its ok to be a little personalized.

Hey Tony, very good idea, this is the only forum I am really active on. And really what a wonderful great bunch of folks. Very helpful and all very friendly. The best is the recipes and the almost instant help that is offered. Keep up the good work Sir.

Hi my name is Laura and I got the model #2 for my husband for Christmas, but it looks like using it will be my job/ pleasure. I've never smoked anything in my life, though I'm a fairly accomplished cook. I seasoned first and now there is a pork shoulder smokin away. Great forum. Not sure how much I will participate, but I will be back to read for advice. One thing though I don't know how to add a permanent signiture line. I post from my phone so maybe that's not possible from a phone.

Welcome aboard, Laura! You'll be a great Pit Master in no time; just hang with us when you can! To add a signature line, just go to your Forum Profile settings (Profile tab at the top of the screen). There's a section for signature.

Hi fellow smokers, Tes here. I ordered the #2 model today after much research and a helpful phone conversation with David. Smoking the game meat we hunt is a family tradition. Like a lot of folks we've gone through many smokers over the years. Reading this forum and a multitude of positive reviews and ratings in online searches made the decision easy to invest a little more in a high quality smoker. I'm excited for it to arrive. A batch of wild pig Canadian bacon will be cured and ready to be smoked. I've already learned some great tips and advice on the boards tonight. Thanks much!

Hello everyone!
Just ordered the SI Model #3 and am eagerly awaiting its arrival. Just a little about me, not new to BBQ'ing but just started down the electric route almost 2 years ago when my wife bought me a Christmas "special" at a big box store. Knowing there had to be something better out there, I stumbled onto the Smokin-It site. Read many of your posts, reviews and experiences and pulled the trigger this morning. Thank all of you for taking time to share, as it was very helpful to me.
Can't wait to see what this bad boy will do!

I do have one question, but please pardon me if this isn't the correct thread to ask it:
How do you guys handle a situation where you're 4 hours into say an 8 hour smoke, but you want to add something that may only take 4 hours. So you want to add it midway in order for everything to finish about the same time. 6oz of wood may be perfect for the 8 hours because as you all know meat stops taking good smoke after the internal temp reaches 140. I would think that the amount of smoke is diminished significantly after 4 hours (is what I'm guessing anyway). However whenever you add the other meat, it has not reached that temp and needs smoke. How do you combat that, or am I just overthinking it and the smoke is still significant enough?
Any comments would be appreciated. The #3 will be arriving shortly!

Mark, I have smoke different meats/foods in my #2. If I need to smoke some butts and ribs, I do the butts and rest them in a cooler and smoke the ribs while they are resting. I prefer to only open my smoker twice - once to put the meat in and once to take it out. This works for me but I am sure someone will provide you with some better answers.

If you absolutely, positively know you are going to add food halfway through a smoke, keep a rack out and load it up with the second item. Then it is a quick open, slide the loaded rack in and lock the door down. Only fly in the ointment on that procedure is no smoke, or very little left. So you might as well do the long smoke first and the short smoke second (with wood). Enjoy!

Thanks David. I’ll either go that route or start it all together and pull off the shorter smoke item and just foil it. Sometimes the obvious answer is so far away. I’m just over thinking it I’m sure.
In other news, got some spare ribs going as I’m typing. Already prepped a brisket and gonna throw it on late this evening for a 20+ hour smoke.

Hello, I've been reading for a while. Trying to decide between a #1 or a #2.
I have an electric stainless bullet smoker that I have never been happy with.
Any and all advice would be welcomed.

Welcome Fred from SE Arizona. Regarding a 1 or a 2: If you can afford the 2, get it. You may need the extra room from time to time. Better to have too much space and not need it than to need it and not have it.

I started out with a Bradley smoker some 12 or 13 years ago. It was not well made and failed after a few years and I've had a Smokin It 2 for some 7 or nine years I don't actually know. I love smoking meat and right now have some fresh redfish fillets on the 2 with hickory. I'm always interested in things smoked! Looking forward to learning more about pork, beef, seafood and chicken. Also other tips and tricks. I put aluminum foil on the bottom of my smoker and over the top of the smoke box to protect it. So I'm looking for tips and suggestions like these from the learned ones ;) ...
