Newbie Info., Monitor Your Drip Pan !

Newbie lesson learned today.  Smoking 6 racks of baby backs in my #2, and was having trouble getting the smoker up to temperature.  I decided the mass must have been preventing the heat from reaching the upper area of the smoker, so I went out at 3 hours & 15 minutes into the smoke to break the cardinal rule and open the door to rearrange the ribs.

When I opened the door my mini loaf pan that had about 6 oz. of apple juice in it was just about to overflow, and the drip pan under the smoker was almost at the same point.  I managed to remove each and empty into a plastic bucket.

Had never entered my mind how much drippings there would be.  Almost a greasy mess in my driveway.  Lesson learned to keep an eye out during large smokes.

Nice save.  I have done 3 racks a few times and think it wold have plenty of room for double.

Oh, on second thought, i do wrap mine at 2 - 3 hours.  But in case I need to so a quantity of 6, this is a good warning.
