Most people don't, Chris.  Lots of media hype about nitrates, but most of it is just that...hype.  I've replied to your other topic. ;)

+1. Tony (DM) is right. Here's an enlightening article to read by a respected charcuterie journalist and researcher. A friend of mine told me she was avoiding nitrites, and buying her "nitrite-free" bacon at Trader Joes. She's still mad at me to this day for ruining what she thought was "healthy" bacon. Serious denial.
