Second go at bacon

Went for another round of bacon the past few weeks. Did the same box cure process (actually just out in 1/4 cup of cure into zip bag with 4.3lbs of belly)but went 10 days waiting for the firmness to be right. One slab was  4.3lbs of Brown sugar flavored and other was 4.3lbs of my spin on a savory mix of garlic, bay, pepper and rep pepper flake.

Smoke process went longer than last time, which I’m happy about. The outside temp was much cooler being winter so got about 4.5 hours of smoke by feathering the box on and off. Wood was a sweet blend of chips and a few chunks of apple and peach.

I pulled, wrapped and it’s in the ice bath now to go into the fridge. I’ll slice up tomorrow or Wednesday and give it a try but the nibble test was good.
