Hello this is Michael from Seattle, Washington. Model #2 was delivered today as I came home from work. Super excited! This was a gift from my wonderful wife, mother, and children. I think I'll season the smoker tonight and smoke some chicken thighs tomorrow.

So I've been smoking meat for a couple of years now. I started off with a hand-me-down, rusted out, electric barrel smoker. After about a year of smoking pork shoulders, chicken thighs, and bacon the heating element stopped working. I took matters into my own hands and modified the rusty drum into a charcoal smoker. It was never the same. Too much of a pain. I could never smoke something for more than about 4 hours without a lot of headache and I eventually just binned the thing.

I did a lot of research and really wanted to go quality this time around. I am looking forward to smoking some of the more exotic things I have read about on the forum like nuts and cheese. I've never actually done ribs before. I am actually looking forward to Thanksgiving. I am not a huge fan of turkey, but maybe I can do a ham or maybe a duck? Any ideas? I've never actually had a smoked turkey before, I've always found turkey dry, but maybe I will try one of the recipes on this forum.

You've come to the right place for ribs, turkey, ham, duck, ...or anything else worth smoking, Michael!

There are some great duck recipes, in the Chicken and other Birds section.  Just go to that section, and do a search for Duck.  We can definitely get you pointed in the right direction!

Welcome from Virginia, Michael!  I just received my Model #2 the other day as well ... it's all seasoned and ready to go for this weekend!  I cannot wait!  Hey, as a side note, I was out in Bellevue recently for work and really loved the area.
