Bread 10 Grain - Makes great bread

Bread 10 Grain - you can make a loaf or make into hamburger buns or hotdog buns.

1 + ½ cup water
3 T 5 grains (Publix or you can use King Arthur Harvest Grains) + 1 T top bread
3 ½ c bread flour
½ cup red mill 10 grain flour
1 egg
1 ¼ t sea salt
3 T sugar
2 T olive oil
1 T Whole Grain Bread Improver
1 T instant bread yeast
1 T sour dough flavor (optional)

Add all ingredients into stand mixer and mix for 8 minutes or put it in a bread machine and run on manual cycle for 40 minutes. Remove and shape into one large loaf or 2 loafs  and put in them on a cookie sheet lined with parchment.  Cover with clear plastic wrap sprayed with pam and allow to double about 1 hour.

Spray with Quick Shine or brush with egg white & water. Then sprinkle the top with 1 T of 5 grain mixture.

Bake at 375 degrees for 18-25 minutes, until golden brown (temp of bread 205 degrees). Remove from oven and allow to cool on a rack for at least 30 minutes before cutting.

Oh my, Greg!  That's some great-looking bread!  What is "whole grain bread improver?"  Never heard of that.

Hey Tony,

It is vital wheat gluten (when added to the bread will help get more rise out of the bread).

You find it in some grocery stores, I normally buy mine at King Arthur Flours.

That makes sense, Greg.  Since white bread/pizza flour are already high-gluten, I didn't think about wheat flour needing a little help.  Thanks!
