Title: St. Louis Ribs

Nothing fancy here, just wanted to post about a successful smoke of 2 racks of St. Louis style ribs yesterday. I cut the racks in half for my #2 and prepped them the night before using yellow mustard as a binder and Divot Maker’s pork butt rub from the Lazy Q manual. I wrapped them plastic wrap and put in the fridge for the night. I started the smoke at 8:30 at 225* with 3 oz cherry. I have added a layer of foil under my chip screen and that has worked well for me. I can put the wood anywhere in the box and get charcoal. I did put a probe in the ribs and was surprised to see a stall at 172*. I cooked them for 5 hours and then checked. The meat had pulled back but they just didn’t seem quite ready so I let them go 1 more hour and probed them with my instant read thermometer. The texture seemed perfect so I removed them. I wrapped them in foil and let them rest in an ice chest until dinner. They were VERY good. Moist and did not need any sauce. I will use the 6 hour no peek method from now on on St. Louis style ribs.

Sorry, no pictures. It was a nasty, rainy day and I was just glad to get it wrapped up.

Sounds like some great St Louis ribs. Very similar to the method I use. One of my favorites!
