Title: how to smoke a rack of Lamb
Post by: goldentouch on December 04, 2014, 05:04:02 PM
I went by the meat dept. and they had a 53 dollar rack of lamp marked down to 21 dollars.  I have never smoked lamb before can I use my regular pork rub and cook about the same time.   Thanks for any help.

You can use whatever seasoning you are partial to.  A pork rub should be fine.  I would use 2 to 3 oz of your choice of wood.  However, I would only smoke to an IT of 125, remove it & reverse sear it (wide open) on the grill or oven.  Your finished IT should be between 135 (med rare) & 145 (medium).  I like it @ 140.  Ensure you allow it to rest before slicing.

I smoked the rack of lamb this morning.  After preping the lamb and putting on Jeff's naked rib rub and letting sit in the ice box overnight.  I put it in the Model 2 and smoked them to 150.  They were jucie and the best tasting ribs I have done.   I will start looking for some more lamb
