Slow bird!

1st smoke using Auber #2 probe(meat) on Model-2 smoking 5.5 lb chicken, brined 4 hrs, and stuffed with mirepoix. 2 oz cherry(Smokin’ Hot Chips and Chunks), using the attached Auber settings.
225 for 2 hours
225 until 140 IT
350 until 160 IT

After 2:15 the IT is 133 which seems slow to me.
Update: PId 2.8 h reached 140 IT (box temp 226)
Box temp climbing slow, steady green light (no blink) indicating burner fully on
Update: Pid 3.8 h reached 165 IT (box got to: 281)
Pulled the bird, wrapped and ready... More to come with pics.  ;)

Ralph, were I concerned about crispy skin, I would just set to 325 from the get-go.  No need to do the 225 step with poultry (no benefit from "low and slow").  Also, it your bird was at 140 when it stepped to 350, I bet the box temp didn't hardly break 300 by the time the bird was done.  I just do all my poultry at 250.  Easy peezy...

Yep, I gotcha. Pics show temp not close to 300..  :-\

Note  2 oz cherry didn't make a lot of smoke and wasn't ashes..  >:(
