Beer Brined French Fries (oven baked)

*Revised recipe, tastes great less work.

This is a new twist on the normal way I would bake fries. The beer brine helps to tenderize the potatoes and them them an nice crunch on the outside, while leaving the inside fluffy. For this recipe I used Dos Equis Amber Lager Beer.

Ingredients
•   1-2 large potatoes
•   2 T olive oil
•   1 T corn starch
•   Salt & Pepper & Parmesan cheese
•   1 12 oz. beer
•   ½ - 1 cup water
        1 T salt

Directions

Preheat oven to 425 degrees using the convection setting. Line a pan (1” high) with foil and then place a cooling rack on it.
Scrub potatoes and cut into ½” thick fries. Place fries in large bowl of water, let sit for 10-15 minutes, rinse and then soak again. Drain and then add potatoes, beer, salt and water (add enough water to cover potatoes, a zip lock bag also works well here). Place the potatoes in the refrigerator for 4-6 hours.
Remove potatoes, drain and then pat dry. Add potatoes to zip lock bag that has the olive oil and cornstarch, mix well. Next remove potatoes from bag and sprinkle on both sides with a light dusting of salt/pepper and Parmesan cheese. Place in oven a cook until the potatoes are golden brown about 20- 25 minutes.

Thanks Tony,

Normally I would have boiled the fries for 3-4 minutes before baking. The brining takes that step away and the fries also crunchy.

They look really good!  I have an 11 lb butt in the smoker now (on last night at 9:30, and still stalling at 173!)  I may have to run and get some taters to try this! ;)

Hey Dave,

Nope did them in the electric oven set on convention. If you don't have convention, you will most likely need to flip them.

I think I'll try my Nu Wave oven.  It is set up just like that with the pan and rack.  And best of all, that would mean that this is now camping food.

I realize that I forgot the salt in the recipe. It should have 1 T salt in the beer brine!

I made another batch of fries tonight and made some changes, this recipe is easier to prepare and tastes just as good.

•   1 12 oz. beer
•   ½ - 1 cup water

Scrub potatoes and cut into ½” thick fries. In a one gallon zip lock bag, add potatoes, beer, salt and water (add enough water to cover potatoes and place in the refrigerator for two hours.

Remove potatoes, drain and then pat dry. Add olive oil and cornstarch to a one gallon zip lock back mix and then add the potatoes, mix well.

Next remove potatoes from bag and sprinkle on both sides with a light dusting of salt/pepper and parmesan cheese. Place in oven a cook until the potatoes are golden brown about 20-25 minutes.

I made these tonight and enjoyed them with some ribs that I had vacuum sealed.  I mixed it up just a little by adding some Cajun seasoning and a teaspoon of Ranch dressing powder.

Nice!!  Going to have to try these tomorrow Greg!  I'm sure that anything you put into Dos Equis Amber, has to be good and improved from original form!  ;)

I chopped up some of the leftover for my breakfast hash browns this morning.  It was very good for that and I was even able to get them a little crispier.

I am traveling for the next two weeks, but I want to do brined sweet potatoes next time.
