Expected behavior?

I have the Model 3, now with Auber device.  I have set it for 225. Outdoor temp ~ 100

7-8 pound pork butt (boneless - my bad - apparently bone in is better) -at 12 hours, internal temp was ~ 185 (Auber and another thermeter).  Had to quit at that time. Pork tasted fine, nice bark, dark color.  Could have been a bit more tender perhaps.

Is this length of time expected?

The ambient temperature may have had some effect on the box temp and the cycling on and off.  Just a thought.  Was your smoker in the shade or in full or partial sunlight?

As outside 12hours, conditions varied. Mainly partial shade.  But why would that matter?

You pulled it too soon. at 7-8 lbs you are looking at 14-16 hours easily if not longer.

Yep small BB's actually take just as long as a 12+ BB
Definitely edible but as you experienced not as tender pull apart 195-205 seems to be the finished area

I find the ambient temperature has no (or extremely little) affect on this unit, I have used it from 15 degrees to 100 with consistent cook times. This has been reported by many on here who live in extreme climates.

Another fiction I read occasionally, is by opening the door it will add 30 minutes to cook times. This unit is well insulated an recovers quickly. The bigger issue is bleeding heat off from cook temp to 140 when dropping to holding temp. I minimize any door openings but I'm not hesitant to open for removal of items with dissimilar cook times or other reasons. Recovery is very quick an I have not noticed a measurable difference in time.
