I did a 2.5 day chuck roast a couple weeks ago. I was going through pictures and came across the only pick I had of it. It was too beautiful not to share!
Cooked at 131. It was incredible as always!
Just look at this beauty! I'm getting hungry!!!

Looks good. I too use 131 degrees. I have seen recipes that call for 134, but have found 131 to be ideal. It has been a huge hit at dinner parties!
