Hello from Northwest Indiana

New user, new smoker just outside of Chicago here. Been doing “oven-q” for a while and decided to step up my game after using my buddies cookshack a couple times. Have done ribs twice with the cookshack and they’ve been perfect - I don’t think you can beat the ease of use with the electric cabinets.  Decided to go with the Smokin-It 3D after serious shipping issues with cookshack. After doing the research I think I’ll be happier with the Smokin-It!

I’m anxiously awaiting fedex today and about to go pick up a pork butt or chuck roast. I have wings ready to go as well. I’ve been doing keto for over a year now and really wish I had gotten the smoker sooner - could have paid for itself in the cost of jerky alone!

I’ll be pairing the SI3D with a Weber Spirit 210 which I’ve had for about 8 years now and has been bulletproof.

Can’t wait to post some pics from the SI, but here’s my last smoke on the cookshack.

Welcome, I'm sure you'll be happy with the size of the 3D. Unless you do a lot of camping, then you'll want a #1 to take with you.

Thanks guys. I’m sure the size will be more than enough - don’t cook for a crowd usually, but we do normally host thanksgiving and Xmas dinners. I’m sure that extra room will come in handy! No camping here, so no need for portability. I too am from Louisiana (New Orleans), so definitely Geaux Saints!

As for the photos - a trick i learned with phone photos for this site - go into the photo and edit and adjust the orientation, but set it back to the same orientation and save. Then upload. That usually takes care of the photo not posting sideways (at least for me this has worked).

So I’ve come across the “Auber Autotune” instructions and I’m curious if this is something I need to do, or is that only for aftermarket auber controllers?

First smoke - wings! Overnight rub with baking powder, salt, pepper, chili, garlic, onion, paprika. Smoked with apple at 250 for 1.5hrs and finished in the convection oven at 400 for 25 minutes.

Smokey, crispy and delicious!

Thanks! I think they may have been slightly over cooked, so it’ll take some fiddling to get it dialed in.

The rub is kind of my generic all purpose seasoning. I plan on experimenting with different flavors now that I’ll be smoking often. I’m eyeballing different chili powders, mustard powder, ginger and open to any suggestions. My neighbor has some smoked salts that are pretty interesting as well.
